Our story

One fire. Two cooks. Ninety percent of the menu never touches a pan.

We built Maison Corail around a single six-metre hearth because we wanted nowhere to hide. Everything you eat is cooked over live oak — some of it for three minutes, some of it for eleven hours.

The room seats forty-two. There is no second sitting and no turn times. When you book a table, it is yours for the evening, the way a dinner at a friend's house works.

The eleven-hour short rib

Buried in embers at 10am, lifted at 9pm, rested twelve minutes and carved at the table. We fire eighteen portions a night and they are gone by the second course.

Three things we will not compromise on

Cooked in front of you

Every table faces the hearth. There is no back kitchen — you watch the fire, the turning, and the twelve-minute rest before the short rib is carved.

One sitting, no turn time

We take a single booking per table per evening. Arrive at seven, leave at midnight, nobody will ask you to move along.

One menu, cooked once

No à la carte, no substitutions on the fire. Twelve or thirteen dishes a night, each made the one way the kitchen believes it should be.

Tables are held for fifteen minutes past the booking time. For parties of seven or more, or for the counter seats facing the hearth, call us and we will sort it out properly.
